Instant Pot Stuffed Peppers

6-10 red bell peppers (depending on size)
1 T. cooking oil of your choice
3/4 c. chopped onion
4oz can of chopped green chilies
1lb ground beef
1 t. salt
1/2 t. black pepper
1/2 t. onion powder
1/2 t. garlic powder
1 T. chili powder
1 1/2 c. cooked black beans, drained

Hollow our peppers and arrange in your insert pan. Heat oil over medium heat. Saute onion and green chilies until onions are translucent. Add ground beef and cook until fully browned. Mix in spices and black beans. Remove from heat and stuff peppers with the filling. Cover pan with foil and place on the trivet in your Instant Pot above 1 1/2 cups of water. Lock lid, set to “sealing” and cook using the “Steam” setting for 20 minutes (add a few minutes if you like a really soft pepper). Allow to NPR for 10 minutes. Release remaining pressure and remove pan from pot. Top peppers as desired… sour cream, pico de gallo, guacamole, etc. Optional step: Slice peppers in half lengthwise, sprinkle with cheese and broil on a foil lined pan until bubbly and browned. Enjoy!

  5. Hey Nili! I absolutely love your videos. Your children are so well behaved. So I did my own variation of the stuffed bell peppers since I’m doing Keto. I added some Parmesan, salsa, a raw egg to keep it together and mozzarella on top. Added a dollop of sour cream and OMG delicious! Thanks for sharing your family and great recipes!

  9. Now that's a brilliant use of peppers nili,the bit at the end added cheese tops it off.
    I can't bring myself to use black bean or rice 😨,although I know they taste good …..ile just stick to usual colour!
